Black Bean and Red Pepper Burgers

1 onion

400g black beans

1 red pepper

50g bread crumbs

2 cloves of garlic

1 tsp mixed herbs

1 egg

1 handfull of fresh chopped basil

Pre-heat your oven to 190 degrees.

In a bowl, mash up the beans in to a paste.  Then in a food processor chop the onion and garlic and pepper untill they are fine, but not a paste.

Mix with the beans and and the crumbs, basil and mixed herbs then crack the egg into it.  Mix it together untill combined and it holds its shape.

make into a burger shape (about 1 inch thick), and bake in oven on each side for ten minutes.

Server in a burger bun with fresh lettuce and sliced tomato.
