Cheese Cake

225 g

Digestive biscuits, crushed

100 g

Butter

 

100 g

Icing sugar

450 g

Cream cheese/mascarpone

200 ml

Fresh whipping cream

 

Fruit for decoration

Line a 20 cm deep sided dish with aluminium foil.

Mix crushed biscuits with melted butter and place into a terrine ring. 

Beat the cream cheese and icing sugar. Whip cream.

Fold into cream cheese mixPour on biscuit base and allow to set in refrigerator.

Decorate with cream and fruit as required.
