Fighting Tourettes With Food!

100g Courgettes
100g Aubergine
100g Tomatoes
25ml olive oil
25g onion
1 clove garlic
25g red pepper
25g green pepper
1 teaspoon chopped parsley

Concasse the tomatoes.
Dice the courgettes and aubergine into small cubes.
Sam with the peppers
Heat the oil in a non-stick frying pan.
Dice the onion finely and add to the pan, sweat without colour, dont let them burn (harder that it sounds).
Add the courgettes, aubergines and crushed garlic.
Cook for a minute or so then add the peppers and continue frying for a minute or 2 untill the courgettes and aubergines are soft.
Add the concassed tomatoes, chopped parsley and a little salt and pepper.
Concasse-score the bottom of the tomatoes and place them in boiling water for 30-40 seconds. Take them out and peel off the skin, cut into quarters, remove seeds then cut into slices and deice them up.
